Legumes, Nuts, and Seeds: Allergen Stability and Allergenicity of Processed Foods
نویسندگان
چکیده
Most severe allergic reactions, including fatal events, after ingestion of peanuts, soybeans and tree nuts have been reported. Allergens from legumes, nuts, and seeds are predominantly highly potent and stable to food processing. However, it is possible to alter the allergenicity potentially by various procedures. Heat treatments (dry heating, roasting, or baking) and enzymatic digestion affect the allergen structure. Although food processing usually induces at least partial loss of IgE-binding, the formation of neoallergens or release of cryptic IgEbinding epitopes can occur. The present review reports the allergenic and IgE-binding potentials, respectively, of experimental food preparations involving heat and enzymatic treatments and of various food products including peanut and soybean flour, roasted peanuts and nuts, and edible oils. Events of allergic reactions due to inadvertant ingestion of "hidden" allergens in food products are also reported. Available data lack systematic investigations of the allergenicity of foods throughout manufacturing processes from source to shelfproducts. Especially products containing peanut, tree nuts, and seeds should be evaluated since they are commonly seen as "hidden" allergens in various processed foods. Allergens of Animal Origin: Stability and Allergenicity of Processed Foods
This article reviews recent data on the stability of cow's milk, hen's egg, fish, crustaceae, and meat allergens during food processing. Generally, allergens of food origin are stable and highly potent. Most severe allergic reactions, including fatal events, can be due to ingestion of cow's milk, hen's egg, fish, and shrimp. The allergenicity could be altered potentially by various procedures s...
متن کاملA systematic review of the effect of thermal processing on the allergenicity of tree nuts.
BACKGROUND Allergenicity of foods can be influenced by processing. Tree nuts are an important source of nutrition and increasingly consumed; however, processing methods are quite variable and data are currently lacking on the effects of processing on allergenicity. OBJECTIVE To perform a systematic literature review on the effects of food processing on the allergenicity of tree nuts. METHOD...
متن کاملClinical risk assessment of GM foods.
The main concerns about adverse effects of genetically modified (GM) foods on health are the transfer of antibiotic resistance, toxicity and allergenicity. There are two issues from an allergic standpoint. First, the transfer of a known allergen may occur from a crop into a non-allergenic target crop. The second scenario is the creation of a neo-allergen where de novo sensitisation occurs in th...
متن کاملPhytoestrogen content of foods consumed in Canada, including isoflavones, lignans, and coumestan.
Phytoestrogens may play a role in hormone-related diseases such as cancer, but epidemiological and clinical data are conflicting in part due to inadequate databases used in intake estimation. A database of nine phytoestrogens in foods relevant to Western diets was developed to more accurately estimate intakes. Foods (N = 121) available in Ontario, Canada were prepared as commonly consumed and a...
متن کاملZinc and copper content of foods used in vegetarian diets.
The zinc and copper content of seventy-four foods was determined by atomic absorption spectrophotometry. Each of these foods was reported to have been consumed by practicing vegetarians. Legumes, seeds, nuts, whole grains, hard cheeses, and some nutritional supplements were found to be excellent sources of both zinc and copper. Vegetables, fruits, and their products were generally poor sources ...
